This is Wolfburn’s second expression – a sherry cask finished malt that starts its life the same way as the “Northland” bottling. Two types of cask are used: 80% first-fill ex-bourbon and 20% first-fill Oloroso sherry hogsheads. At the end of the maturation the whiskies are brought together to create a perfectly balanced dram that’s also non chill filtered. The rebirth of Wolfburn has been guided largely by Shane Fraser, who was previously production manager at one of Speyside’s most famous family owned distilleries, Glenfarclas.
