Established in 2017, whisky production is now underway at Manly spirits. Proprietor, David Whittaker holds a strong belief that “…good beer yields good whisky and with the right type of yeast, the end product will reflect the quality”. With stills modelled after those at Kilchoman Distillery in Islay and Kilkerran in Campbelltown, the majority of output is expected to reflect traditional Scottish styles. Ex bourbon casks, wine casks as well as port, sherry, bourbon and new American oak finishes are all in the pipeline, as are plans for single barrel releases and experiments with alternative grains. In the meantime, enjoy this delicious new make produced from Australian malted barley.
