Tasting note: [Batch 30 tasted] Very pale straw blush. Herbal / earthy / fresh opening sniffs are also sappy, resiny, peppery and pleasingly dry. 3-4 minutes finds fresh sawn pine, potpourri and hints of eucalyptus. Creamy, with vivacious lemon myrtle, peppery juniper and thyme flavours and a flare of alcohol lifting the finish. Excellent length and balance. Ends tangy, dry, peppery, lipsmacking. We all know that juniper is fairly important when it comes to gin, similar to how words are important to books and marmalade is important to Paddington Bear. However, the Swedish artisan distillery Hernö have taken this a step further and created the Juniper Cask Gin, a gin that has been aged in barrels made from juniper wood, an exciting world first.
