Rarer-than-rare: Folle Blanche represents 1% of Cognac production but before the Phylloxera epidemic of the 19th century it was 95%. It ages faster preserving fresh, floral, fruity flavours. Sadly this varietal did not adapt well to grafting and has almost disappeared! At Dudognon of course authenticity is supreme – in this case availing them selves of just a very small wood/coal pot still, home-made oak barrels, and time.
